Preparation Tip: Pat dry and bring to room temperature before cooking to ensure an even sear.
Cooking Style: Reverse-sear or oven-roast to medium-rare (52–54°C internal temp) for best texture and juiciness.
Resting: Let each rib rest at least 10 minutes after cooking to allow juices to redistribute.
Slicing: Every 2 cm, cut perpendicular to the bone. The knife blade should not be straight but slightly angled to create a bevel.
