The duckling is a young female duck. Smaller than the male, its meat is more fleshy and finer.
Achieve even cooking by taking your meat out of the refrigerator 30 minutes to 1 hour before you start cooking. Additionally, unseal the vacuum-sealed bag to allow your meat to breathe. Vacuum-sealed products have a longer shelf life.
Serve the roast. Make grid-like incisions on the skin so that heat can penetrate evenly and fat can melt more easily.
