Remove the meat from the fridge 15–20 minutes before cooking for more even results.
Lightly oil the meat or your cooking surface (pan, grill, or oven tray).
Cook each cut according to its type:
Chicken supremes & fillets: pan-sear or grill, ~6–8 min per side.
Turkey escalopes: quick pan-fry, 3–5 min per side.
Duck breast: score the skin, cook skin-side down 8–10 min, then finish in the oven or pan.

For juicy duck: Start cold in the pan, skin-side down, and let the fat render slowly.
